Mahi Mahi with Ginger
Ingredients
3 tablespoons soy sauce
Salt and pepper
1 clove garlic (crushed)
4 (6 ounce) mahi mahi fillets
1 tablespoon vegetable oil
2 teaspoons olive oil
3 tablespoons balsamic vinegar
3 tablespoons honey
1 teaspoon grated fresh ginger root
Directions
Combine the honey, olive oil, balsamic vinegar, garlic, ginger and soy sauce in a glass dish. Flavor the fish fillets with pepper and salt. Put the fillets in the dish.
If the fillets have skins, put them in the dish with the skin down. This mahi mahi recipe has to be marinated for 20 minutes. Heat the vegetable oil in the skillet (heat is medium to high). Remove the fish from the marinade. Keep the marinade in reserve.
Fry the fish for 8 minutes (4 minutes per side). Turn the fish over once. Cooked properly, the fish should flake easily with a fork. Put the fillets on a serving plate. Pour the marinade in the skillet over medium heat. Keep heating until the glaze becomes consistent. Pour over the fish.
Mahi Mahi with Sesame and Soy Sauce
Ingredients
3 minced shallots
Coarse kosher salt
Ground white pepper
1/2 cup heavy cream
1/2 cup dry white wine
Ground white pepper
2 tablespoons canola oil
4 shiso leaves
4 tablespoons black sesame seeds (add more to this mahi mahi recipe if you want)
6 (6 ounce) mahi mahi fillets
4 tablespoons sesame seeds
3 tablespoons soy sauce
1 juiced lemon
1/2 cup unsalted butter (chilled and cubed)
2 tsp of fresh ginger root (minced)
Directions
Combine the following in a saucepan over medium heat: shallots, lemon juice, white wine and ginger. Cook until the liquid is down to 2 tbsp. Add the heavy cream; boil it lightly.
Reduce the cream in half (don’t burn). Stir the soy sauce in the mix. Pour this in a blender. Blend at a low setting while adding the butter cubes slowly. Add the shiso and blend it for 10 more minutes. Add some salt and pepper to taste. Preheat the oven to 425 F (220 C); the sauce must be kept warm.
Continue making this mahi mahi recipe by heating oil in a sauté pan (high heat). Add salt and white pepper to the fillet. Put the sesame seeds on a dish. Press the top side on the mix and press the seeds on it.
When the oil starts to smoke, add the fish and sesame seed on the pan (side down). Sear for 45 seconds each side. Put the pan in the oven. Cook it for minutes. This dish is also served with the sesame crust side on top. This dish is served with ginger butter sauce.
